Serves 10 guests
To make the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Drink (produces 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Instructions
To prepare the Citrus Syrup: Put all the items in a pan, bring to a gentle boil, agitating so the sugar melts. Then, remove from the burner and leave to cool down completely. Pour to a sealable bottle, close it and refrigerate it in the fridge, it can be stored for up to four weeks.
To make Premix: Combine every spirits and syrup in a sizeable container, let it rest for one hour, then filter it best through cheesecloth, so it's fully clarified.
To serve: Measure 85ml of the premix into your mixing glass containing ice, and agitate gently for one minute to cool it down. Strain into a chilled martini glass or a similar vessel, garnish with the cranberries and complete it with a quick spritz of the essential oil above the glass.
